Korean-Style Hot Pepper Meat Bundles

We really liked this recipe. I cooked it with the ground turkey breast. I served it on rice for the kids since they don't like "salad" very much.

½ cup rice wine or dry sherry
2 tablespoons hoisin sauce
2 tablespoons ketchup
2 tablespoons sugar
1 tablespoon Sriracha Chili Sauce( I used 1 tsp)
½ tablespoon toasted sesame oil
½ tablespoon macadamia nut oil or other neutral oil
½ cup thinly sliced scallions, divided
2 tablespoons minced fresh ginger
1 tablespoon plus 1 teaspoon minced garlic
1 pound ground turkey breast or ground beef sirloin
Leaves from 2 heads of Boston lettuce, washed and dried

1. In a small bowl or measuring cup, combine the rice wine, hoisin sauce, ketchup, sugar, and chili sauce. Whisk to blend
2. Place a large nonstick skillet over medium-high heat. When it is hot, add the oils in the center of the skillet to form a little pool; do not spread it around. When hot, add ¼ cup of the scallions along with the ginger and garlic. Cook about 1 minute, stirring gently without dispersing the pool. When the mixture becomes fragrant, spread it over the entire skillet.
3. Add the ground meat in handfuls. Cook about 5 minutes until no longer pink, stirring and chopping down with spatulas to break up the lumps. Add the rice wine mixture and stir to blend. Lower the heat to medium and cook until almost all of the liquid has evaporated, 8 to 10 minutes. Divide among 4 bowls and sprinkle with the remaining ¼ cup scallions. Serve immediately with lettuce leaves for wrapping.

Makes 4 servings

Per serving: Calories 227, 8 g total fat, 4 g saturated fat, 63 mg cholesterol, 10 g total carbohydrate, 1 g dietary fiber, 24 g protein, 506 mg sodium.

Herb Rubbed Sirloin Tip Roast

This is from my mother. She made it for Christmas to be a little different. She and everyone there raved about it. She said it was because dinner was two hours late so they were starving by the time they got to eat. But I think it was probably good no matter what because even the vegetarians loved it. I am looking forward to trying it soon!

Ingredients:

1 1/4 TB paprika
1 TB Kosher salt
1 TB garlic powder
1/2 tsp ground black pepper
1/2 tsp onion powder
1/2 tsp ground cayenne pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
2 TB olive oil
1 3 lb. sirloin tip roast

Directions:

In a small bowl mix the paprika, salt, garlic powder, black pepper, onion powder, cayenne pepper, oregano, and thyme. Stir int eh olive oil and all mixture to sit about 15 minutes.

preheat oven to 325 degrees F. Line a baking sheet with aluminum foil

Place the roast on the prepared baking sheet, and cover on all sides with eh spice mixture.

Roast 50 minuets in the preheated oven or until the internal temperature is 145 degrees F. Let sit 15 minutes before slicing.

*can be used on other cuts of meat (pork, chicken, ...) my mother thought that sage could be substituted for the oregano if I wanted too.

French Dip Sandwiches

I found a great recipe and then made it my own...I LOVE these. The best I have ever had. Someday make this and you will be so happy you did. YUMMY!

Ingredients:

1 medium onion cut in half and sliced and separated

3 garlic cloves minced

3 Tbs. Butter

Water to cover roast

2-3 TBs beef bullion

1 ½ tsp oregano

½ tsp pepper

3 lbs. beef tender roast

Long Whole wheat rolls

Smoked sliced Provolone or sharp cheddar


Directions:

In a slow cooker melt butter while on high as you chop ingredients. Then add onion, garlic, herbs, bullion and stir and let cook slightly. Then add the roast and water to mostly cover roast. Let cook all day until the meat is shred-able. Turn the roast throughout the day and the last 1 or so let it cook with the lid off to let the juices reduce a bit. When done remove roast and shred. Taste broth and adjust flavor. Then heat rolls in the oven a little bit. Slice in half and place the cheese inside put the meat back in crock pot. Right before serving drain some juice into wide mouth cups for people to dip the their sandwiches in. Place meat in sandwich and then dip it to have sandwich heaven!


* When I am trying to be healthier I put my meat on shredded lettuce and put a little grated provolone on top. Still good not as good.

Authentic Mexican Heaven

This is one of our favorites. It has the rich full taste of a whole-in-the-wall Mexican restaurant but you don't have to worry about what is in it and if they washed their hands before they cooked it! :o)

I like making this for company. It is fancier and different then a normal Crockpot meal but it has all the convenience; you can enjoy your company and you aren't rushing around a hot kitchen trying to get the food ready. When we have company I serve it with a Mexican inspired salad that I will list below and fresh made salsa and tortilla chips. And it makes a ton so invite someone over or half it! :o)

Slow-Cooker Mexican-style Pork Stew
5 pounds, country-style pork ribs, trimmed
2 TB vegtable oil
2 onion, chopped
2 TB chili powder
5 garlic cloves, minced
1 (14.5 oz.) can diced tomatoes
5 cups reduced -sodium chicken broth
3 cans (14.5 oz.) white or yellow hominy rinsed
2 TB minced fresh oregano or 2 ts dried
1/4 cup minced cilantro
1 TB fresh lime juice

1.) dry pork with paper towel and trim off excess fat. season generously with salt and pepper. Heat vegetable oil in a 12 inch skillet oer med-high heat until just smoking. Brown half of the pork at a time tryign to get each side brown, about 10 minutes. Then place the brown pork in the slow cooker. Then repeat with the other half of the pork.

2.) leave the excess oil int eh skillet and then add the onion, slat and chili powder. Cook scraping the browned bits off of the pan. Cook until onion is soft about 5 minutes. stir in garlic and cook for 15 seconds. Then add the tomatoes undrained. Bring to a simmer and then pour into the Crockpot.

3.) add the broth, hominy, and oregano to the slow cooker. Cover and cook on either low or high, until the meat is tender. 7-8 hours on low and 5 to 6 hours on high.

4.) transfer the meat to a large bowl and let cool. Let the cooking liquid settle for 5 minutes, then use a wide spoon skim off the fat on the surface. When the meat is cool enough to handle, shred it with you hands (I never am patient enough to wait and I just use two apposing forks). Discarding any fat and gristle and add it back to the slow cooker. Before serving stir in the lime juice and cilantro.

*I like mine thicker so I add a little flour past to the juices in the Crockpot and let it thicken a bit, but that is optional I just figure stew shouldn't be like a soup. I always add more salt to my food so after I've got everything together I seem to always add some chicken or beef bullion to the stew and mix it well. I just think it needs more salt and bullion gives it a fuller flavor then just salt a lone dose. And I don't use the reduced sodium chicken broth either. We like to eat it with warmed tortillas and sour cream too!

Mexican Salad

Assemble the salad with all these ingredients or just the ones you like:

Ice burg lettuce
Romain lettuce - or favorite dark leaf lettuce
Sliced thin bell pepper
Chopped green onion or thinly sliced red onion
Sliced thin tomatoes
Black beans rinsed
canned corn drained
Crumbled dry Mexican style cheese (optional)

Dressing:
1/4 cup olive or veg oil
1/4 cup lime or lemon juice (lime can be a bit bitter)
2 TB fresh chopped cilantro
1 TB chopped parsley
1 tsp cumin
1/2 tsp chili powder
1/2 tsp salt ( or to taste)
2 cloves garlic minced ( or to taste)

Pour dressing over salad and toss before serving. Very good stuff.
